In a 12-inch non-stick pan, cook 1 package (6.2 ounces) of fried rice (rice and vermicelli mix with almonds and Oriental seasonings) and 2 tablespoons of margarine or butter over medium heat for 2 to 3 minutes, stirring every once in a while, until the rice is golden brown. Mix the water with the seasoning packet from the rice mix and a half teaspoon of a grated lemon peel. Heat to the boiling point and after that reduce the heat. Cover and simmer 10 minutes.
Stir in 1 bag (1 pound) of frozen corn, broccoli, and red peppers. Heat to the boiling point, stirring occasionally. Cut 1 pound mild-flavored fish fillets, about a half inch thick, into 4 serving pieces; arrange on rice mixture. Sprinkle fish with a half teaspoon of lemon-pepper seasoning; drizzle with 1 tablespoon lemon juice. Reduce the heat. Cover everything and simmer for 8 to 10 minutes or until the fish starts to flake easily with your fork and the vegetables are tender. Sprinkle with 2 tablespoons of chopped fresh parsley.

Lentil rice with turmeric fish

Heat half of a tablespoon of olive oil in a large saucepan over medium heat. Add one brown onion, finely chopped, and 2 garlic cloves, crushed, and cook, stirring, for 5 minutes or until onion softens.
Add 1 cup (200g) basmati rice and stir to coat. Add 1 and a half cups (375ml) Massel vegetable liquid stock and 2 tablespoons lemon juice and bring to the boil. Reduce the heat to low and cook, covered, for 10 minutes or until all liquid is absorbed and the rice is tender. Add 100g green beans, chopped, and 400g can lentils, rinsed, drained, and use a fork to stir through. Set aside, covered, for 5 minutes.
Meanwhile, combine 1 and a half teaspoons of ground turmeric, 1 and a half teaspoons of ground cumin, a half teaspoon of chili flakes and a half tablespoon of olive oil in a large bowl. Season with salt and pepper. Add 8 (about 800g) white fish fillets (such as bream or whiting) and turn to coat in spice mixture.
Heat a sizeable non-stick frying pan over high heat. Add the fish fillets and cook for 1-2 minutes on each side or until just cooked through. After that just remove from the heat source.
Spoon the rice evenly on the serving plates. Top with fish and serve immediately with lemon wedges.

White Fish with Tomato and Cheese Rice
